#kvpkitchen We roasted a while chicken for Sunday dinner. We stuffed it with lemon wedges plus thyme and rosemary from our garden. We also added sticks of butter under the skin.

🍗 We used a Bourdain recipe from his cookbook Appetites. We made a delicious sauce out of roast chicken drippings plus parsley, lemon juice and butter.

😋My kid loved it.

🍝 🍋🍃 We also made creamy lemon fettuccine with fresh dill from the garden. I used a @christianreynoso recipe from @nytimes. I didn’t have Meyer lemons, but regular lemons worked out fine.

#kvpinmybelly On my last day of classes for the Spring semester, I had lunch at @pomopizzeria. I ordered a bowl of Strozzapreti Salsiccia with a creamy tomato sauce, sausage, and Parmigiano Reggiano.

Since I had one more class to teach, I couldn’t enjoy a drink at the bar. So, I enjoyed my lunch with @ruhlman’s “The Making of a Chef.”

#kvpkitchen - I’ve seen plenty of people talking about the benefits of adding coconut milk to their adobo dishes. I wanted to try it out.

We used @ANGELA.DIMAYUGA’s recipe in the New York Times for Coconut Milk Chicken Adobo. My kitchen still smells like coconut vinegar, soy sauce, garlic, peppercorns, and bay leaves simmering on the stove.

🥥 The coconut milk brought all those strong flavors together. Time on the stove made those flavors mellow out. Overal, each bite of chicken was light and packed with flavor.

🍗 The chicken came out tender and juicy. My kid loved it.

🍚 It tasted awesome with rice. I also added sautéed spinach and sliced green onions.

#kvpaz This weekend, I met up with my #NextGenRadio colleague @cuevachalou at @latinx_studies conference at @arizonastateuniversity. I checked out her fantastic session on Bilingual Communicative Spaces at #LSA2024.

The conference had a wonderful theme: Justice and Joy.

Panelists presented compelling research into the ways Spanish heritage language shapes identity and community. Scholars also shared how language can challenge the normalization of monolingual expectations in society and institutions like education and news media.

🍔 The menu is a little different from the online one. I was so sad that the bean and cheese wrap wasn’t on the menu. Still - plenty of good food options, including the bacon cheeseburger sliders and fries. Very yummy and perfect food pairing for our cocktails.

🥔 I needed more potatoes in my life, so we ordered the potato barrels as well. These fried potato bites are stuffed with bacon bits, chives, and sour cream. They’re served with a tasty whiskey cheese sauce.

#kvpkitchen We had salmon burgers in the freezer. We figured we could cut up the meat and toss it with pasta. I wanted to make a pasta sauce with ingredients we had at home: rosemary from the garden, butter, tomato paste, cheese, and heavy cream. I stumbled on a rosemary cream sauce on Heathen Heart’s blog, which was adapted from InterCourses: An Aphrodisiac Cookbook by Martha Hopkins and Randall Lockridge.

The combination of minced rosemary, tomato paste, and wine (we used a Duckhorn Chardonnay) was quite sweet and fruity. However, after 10 minutes of simmering in the pan, the flavors mellowed out, and the salt helped bring out the best in all the ingredients.

It turned out to be a really thick pasta sauce. Next time, I will use a little more water to thin it out. The rosemary cream pasta tasted delicious with salmon chunks.

Our panel had advice for journalists entering the newsroom and they advocated for all journalists to take a break and take care of themselves. Self-care is so critical! All journalists need to be mentally and physically well to meet the demands and stress of this industry.

Finally, it was wonderful to hear how their lived experiences as AAPI women helped them report and share stories from all communities in their news markets.

Our kid’s egg hunt ticket came with an all access-wristband to the rides and cookie decorating. It wasn’t too crowded like the Halloween and Xmas events.

🐣 You have to bring your own basket. And there were plenty of eggs to go around.

#kvpkitchen We made another version of Hainanese chicken and rice for Sunday dinner. I used @eatingwithkirby recipe, which combines turmeric and soy sauce for a tasty marinade. It’s a one-pot recipe, so we used the pressure cooker setting on our Ninja.

🐤 I used scallions from my garden for the ginger scallion oil. My kid enjoyed the chicken.

🥒 Chopped cucumbers added a nice crunch to the dish.
